Performing the measurement for Micrometers Haugh
Operation is extremely easy. You simply must break the egg on a flat surface and apply the instrument on the top of the albumen (usually 1 cm of the yolk) until the probe comes into contact with it.
To determine the quality of Haugh units you should apply the following formula:
Hu = 100 * log (H – 1.7 W0.37 +7.57)
Where:
Hu = Egg quality in Haugh units
W = Egg weight in grams
H = Height of the albumen in mm
The result should be a value between 20 and 110 Haugh units.
